Equipment

  • rolling pin
  • pie dish
  • Pastry Brush
  • instant read thermometer

Ingredients

Pie Crust

  • 2 Homemade Pie Crust or All Butter Pie Crust Both recipes make 2 crusts, 1 for bottom and 1 for top

Filling

  • 10 cups apple slices about 8 large peeled and cored apples
  • 0.5 cups granulated sugar or packed brown sugar
  • 0.25 cups all-purpose flour spooned & leveled
  • 1 Tablespoon lemon juice
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 1 large egg beaten with 1 Tablespoon milk for egg wash
  • 1 coarse sugar optional for sprinkling on crust

Instructions

Preparation

  • Prepare either pie crust recipe through step 5. The pie dough needs to be refrigerated for at least 2 hours before using.
  • On a floured work surface, roll out one of the discs of chilled dough. Place the dough into a 9-inch pie dish. Tuck the dough in with your fingers.
  • In a large bowl, stir the apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg together until thoroughly combined.
  • Pour the apple filling into a very large skillet or Dutch oven. Cook over medium heat for about 5 minutes.
  • Preheat oven to 400°F (204°C).
  • Spoon the filling into the crust.
  • Remove the other disc of chilled pie dough and roll it into a circle. Cut strips of dough for a lattice crust.
  • Brush the top of the pie crust with the egg wash and sprinkle with coarse sugar, if using.
  • Bake the pie for 25 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for 35-45 more minutes.
  • Remove pie from the oven and cool for at least 3 hours before slicing and serving.

Notes

Pie can be made ahead and frozen. Use Granny Smith and Honeycrisp apples for best flavor.
