Pasta

  • 2 cups elbow macaroni

Seasoning

  • 1 tablespoon salt
  • 1 teaspoon sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Dressing

  • 1 cup mayonnaise Use high-quality for best flavor.
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white wine vinegar

Vegetables

  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • ½ cup celery chopped
  • cup red onion diced
  • 2 tablespoons fresh parsley chopped

Optional Ingredients

  • ½ cup cheddar cheese shredded
  • ¼ cup pickles or relish

Recipe Steps

  • Bring a large pot of salted water to a boil and cook macaroni until al dente. Drain and rinse under cold water, then let it cool completely.
  • Whisk together mayonnaise, Dijon mustard, vinegar, sugar, garlic powder, onion powder, salt, and pepper until smooth.
  • Finely chop vegetables and parsley evenly.
  • Mix cooled macaroni with dressing until fully coated.
  • Fold in vegetables and optional ingredients.
  • Taste and adjust seasoning.
  • Refrigerate for 1 to 2 hours.
  • Stir before serving and refresh with mayo or milk if needed.

Notes

Cool pasta completely before mixing. Refresh with extra dressing before serving if needed.
