  • 2 medium zucchinis, grated

Dry Ingredients

  • 1.5 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Wet Ingredients

  • 2 large eggs

  • 1 tablespoon sesame seeds optional
  • 1 tablespoon poppy seeds optional

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture to avoid soggy bagels.
  • In a large bowl, combine almond flour, baking powder, onion powder, garlic powder, salt, and black pepper.
  • Add grated zucchini and eggs to the dry ingredients. Mix until well combined.
  • Scoop out portions of the dough and shape them into bagels on the prepared baking sheet. Use your fingers to create a hole in the center of each bagel.
  • If desired, sprinkle sesame and poppy seeds on top of the bagels for added flavor.
  • Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the bagels are golden brown.
  • Once baked, remove the bagels from the oven and let them cool on a wire rack for a few minutes.
  • Slice the bagels in half and they are ready to enjoy!
