Batter Ingredients

  • 4 pieces bananas very ripe with brown spots for best sweetness
  • ½ cup butter I prefer Kerrygold unsalted for this
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 teaspoon vanilla
  • 2 cups flour I always use King Arthur all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup milk

Topping Ingredients

  • ½ cup Nutella warmed slightly to make swirling easier
  • cup hazelnuts roughly chopped into ¼-inch pieces
  • ½ banana banana sliced into ¼-inch rounds for the top

Preparation Instructions

  • Preheat your oven to 350°F. Grease a 9x5 inch loaf pan and set aside. Chop the hazelnuts and slice the banana; set aside. Warm the Nutella slightly to make it easier to swirl into the batter.
  • Mash the 4 very ripe bananas in a large bowl until mostly smooth. Add melted butter and stir until well combined. Mix in brown sugar, sugar, and vanilla extract until uniform.
  • In a separate bowl, whisk together flour, baking powder, salt, and ground cinnamon. Set this mixture aside.
  • Add the dry ingredients to the wet banana mixture, alternating with the milk. Fold until just combined.
  • Pour about two-thirds of the batter into the loaf pan. Create a shallow channel in the center, spoon in the Nutella, and cover with remaining batter. Arrange banana slices on top and sprinkle with chopped hazelnuts.
  • Bake for 1 hour and 10 minutes or until a toothpick inserted comes out clean. Tent with foil if the top browns too quickly.
  • Remove from the oven and let it cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

Slicing while the bread is warm causes it to crumble, so let it cool completely for clean slices.
