  • 4 cups Rice Chex cereal
  • 1.5 cups white chocolate chips
  • 3 tablespoons butter
  • 3 tablespoons strawberry gelatin mix
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon cream cheese extract
  • 1 cup powdered sugar
  • 0.5 cup crushed graham crackers
  • 0.5 cup freeze-dried strawberries crushed
  • 0.5 cup pink candy melts optional

Instructions

  • Line a large baking sheet with parchment paper and set aside.
  • In a microwave-safe bowl, melt white chocolate chips and butter in 20–30 second intervals, stirring until smooth.
  • Stir in vanilla extract and cream cheese extract.
  • Mix in the strawberry gelatin powder until fully combined.
  • Place cereal in a large bowl and pour the melted mixture over it, gently folding to coat evenly.
  • Add crushed graham crackers and toss lightly.
  • Transfer mixture to a large zip-top bag with powdered sugar and shake until coated.
  • Fold in crushed freeze-dried strawberries.
  • Spread onto the prepared baking sheet and let set for 15–20 minutes.

Notes

Melt the chocolate slowly to avoid burning and ensure a smooth coating. Use fresh cereal to keep the texture crisp and light. Allow the mixture to cool completely before storing to prevent stickiness.
