Ingredients
  

For the slaw

  • 14 oz coleslaw mix
  • 1.5 tablespoon vinegar
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon sugar
  • 1 teaspoon oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

For the bang bang sauce

  • 0.5 cup mayo
  • 0.25 cup sweet chili sauce
  • 1.5 tablespoon sriracha
  • 0.25 teaspoon garlic powder
  • a pinch salt

For the shrimp

  • 1 lb shrimp (peeled, deveined, and patted very dry)
  • 1.5 cups cornstarch
  • 5 tablespoon oil

For assembly

  • 12 pieces corn tortillas (lightly charred)
  • 0.33 cup cilantro (roughly chopped)
  • 1 cup pico de gallo

Preparation

  • Combine the coleslaw mix with vinegar, lime juice, sugar, oil, salt, and pepper in a large bowl. Toss well to evenly coat and let it sit.
  • In a separate bowl, whisk together the mayo, sweet chili sauce, sriracha, garlic powder, and a pinch of salt until smooth.

Cooking the Shrimp

  • Pat the shrimp dry with paper towels. Toss the shrimp in cornstarch until evenly coated. Arrange on a plate.
  • Heat 5 tablespoons of oil in a skillet over medium-high heat. Fry the shrimp for about 2 minutes per side until golden and crispy.
  • Toss the hot shrimp in the bang bang sauce while they're still warm.

Assembling Tacos

  • Warm each corn tortilla in a skillet for about 30 seconds per side until lightly charred.
  • Layer the tacos with dressed coleslaw, bang bang shrimp, pico de gallo, and cilantro.
  • Serve immediately while the shrimp is still warm and crispy.
