Ingredients
  

Breading and Seasoning

  • ½ cup all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons kosher salt divided
  • ¼ teaspoon black pepper

Chicken

  • 3 medium boneless, skinless chicken breasts (about 1 ½ pounds)

Cooking

  • 3 tablespoons olive oil divided
  • 2 tablespoons unsalted butter
  • 1 large yellow onion thinly sliced (about 3 cups)
  • 2 cloves garlic minced
  • 2 cups low-sodium chicken broth

Instructions
 

Preparation

  • Whisk flour, paprika, onion powder, and garlic powder together in a bowl.
  • Cut chicken breasts in half horizontally; pound to an even thickness and season with salt and pepper.

Cooking

  • Heat olive oil in a skillet and sear chicken until browned. Transfer to a plate.
  • Melt butter, add onion and salt, and cook until softened. Stir in garlic and reserved flour mixture.
  • Stir in chicken broth, bring to boil, then return chicken to skillet and simmer until cooked through.

Notes

Serve with rice or mashed potatoes for a complete meal.
