Ingredients
  

Chicken and Vegetables

  • 1.5 pounds boneless skinless chicken breasts trimmed
  • 0.5 pounds fresh green beans trimmed
  • 1 pound red skin potatoes cubed
  • 0.333 cup lemon juice
  • 0.25 cup olive oil
  • 1 teaspoon Montreal chicken seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon onion powder
  • 2 cloves minced garlic or 1 teaspoon minced garlic
  • 3 tablespoons salted butter optional

Instructions
 

Preparation

  • In a medium bowl, add the lemon juice, olive oil, chicken seasoning, lemon pepper, salt, pepper, onion powder, and minced garlic. Whisk together.
  • To one side of the slow cooker, pile in the diced potatoes.
  • On the other side, pile in the green beans.
  • Optional: drizzle 3 Tablespoons of melted butter over the potatoes and green beans.
  • Layer the chicken breasts in the center.
  • Pour the lemon juice mixture evenly over the chicken, potatoes, and green beans.
  • Cover and cook on HIGH for 3-4 hours or LOW for 4-6 hours without opening the lid.

Notes

Cook times may vary by slow cooker. Always check the chicken's internal temperature, it should reach 165°.
