Ingredients
  

Shortbread Crust

  • ½ cup unsalted butter room temperature
  • cup granulated sugar
  • ¼ teaspoon pure vanilla powder optional, but recommended
  • ¼ teaspoon kosher salt
  • 1 cup all-purpose flour 120 to 140g

Mascarpone Filling

  • 6 ounces mascarpone cheese room temperature (or cream cheese)
  • 2 tablespoons sugar
  • ½ teaspoon pure vanilla extract
  • 1 large egg
  • teaspoon lemon juice freshly squeezed
  • pinch kosher salt

Apple Topping

  • 20 ounces peeled and diced golden apples (565g)
  • cup sugar
  • ¼ teaspoon vanilla bean powder
  • ¼ teaspoon ground cinnamon or more to taste (optional)
  • ¼ teaspoon kosher salt
  • freshly grated nutmeg to taste
  • fresh lemon juice a squeeze

Instructions
 

Preparation

  • Preheat the oven to 450°F/232°C and prepare the cake pan by buttering a 9-inch springform pan and lining it with parchment paper.
  • Make the shortbread crust by creaming together the butter, sugar, vanilla, and salt until light in color. Blend in the flour until just combined.
  • Press the shortbread mixture evenly in the bottom and slightly up the sides of the springform pan. Refrigerate while preparing the filling.

Cooking

  • In a skillet, sauté the apple topping ingredients until apples are tender, about 10 to 12 minutes. Allow to cool slightly.
  • In the stand mixer, whisk mascarpone until light and fluffy, add sugar, vanilla, lemon juice, and salt. Then add the egg, blending until no streaks remain.
  • Add the mascarpone filling to the crust, top with apple mixture, and lightly press them down. Bake at 450°F for 10 minutes, then reduce heat to 400°F and bake for 20 to 25 minutes.
  • Cool for 15 minutes in the pan before transferring to a wire rack. Serve as desired.

Notes

Store covered in the refrigerator. Use cream cheese if mascarpone is unavailable; it will add a nice tang. Use apples that are slightly past their prime.
