Ingredients
  

  • 2 whole lemons One lemon reserved for serving
  • 4 cloves garlic grated
  • 2 tablespoons Herbes de Provence
  • 2 teaspoons Kosher salt
  • Freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil high quality recommended
  • 2.5 pounds bone-in skin-on chicken thighs and legs about 4 legs and 4 thighs
  • 1.5 pounds yellow potatoes halved lengthwise or quartered if large
  • 4 medium shallots roughly chopped
  • 12 whole Castelvetrano olives pitted and halved
  • ¼ cup chopped parsley
  • 2 tablespoons chopped tarragon

Instructions
 

  • Make the Herbes de Provence marinade: Finely zest the lemons and grate the garlic. In a large bowl, combine lemon zest, garlic, Herbes de Provence, salt, black pepper, and olive oil.
  • Marinate the chicken and potatoes: Add chicken and potatoes to the marinade, toss to coat, and let stand for 30 minutes or refrigerate up to 8 hours.
  • Get ready: Preheat the oven to 425°F and arrange chicken and potatoes in a single layer on a rimmed baking sheet.
  • Roast chicken and potatoes: Roast for about 20 minutes until golden.
  • Add shallots and olives: Scatter shallots and olives around chicken and roast for another 20 to 30 minutes until chicken is browned.
  • Finish and serve: Squeeze lemon juice over the dish, scatter with parsley and tarragon, and serve.

Notes

You can substitute a whole cut-up chicken for the chicken thighs and legs. To pit olives, press each olive with a knife to split and remove the pit easily.
