- 4 large (10-inch) Flour Tortillas
- 2 cups Shredded Cheese (cheddar, Monterey Jack, or a blend)
- 1 cup Onion Ring Chips (crushed) store-bought or homemade
- 4 oz Cream Cheese softened
- ½ cup Sour Cream
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ½ teaspoon Salt to taste
- ¼ teaspoon Black Pepper to taste
- Olive Oil or Cooking Spray for grilling
- Fresh Chives or Green Onions optional, for garnish
In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy, about 2 minutes.
Lay out your flour tortillas on a clean surface. Spread a generous layer of the cheese mixture onto half of each tortilla. Sprinkle ½ cup of shredded cheese on top, followed by ¼ cup of crushed onion ring chips. Fold the tortillas over to create a half-moon shape.
In a large skillet, heat a drizzle of olive oil or spray with cooking spray over medium heat. Allow it to heat for about 2 minutes until shimmering but not smoking.
Place the folded quesadillas in the skillet, cooking for about 4-5 minutes on one side until golden brown. Carefully flip them over using a spatula, and cook for another 4-5 minutes on the other side until the cheese is melted and the tortillas are crispy.
Remove the quesadillas from the skillet and let them cool for 1-2 minutes. Slice each quesadilla into wedges and serve warm, garnished with chopped chives or green onions if desired.
