Ingredients
  

Dill Greek Yogurt Sauce

  • 1 clove garlic, minced
  • 1 cup fresh dill, chopped
  • 1.25 cups Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 0.5 medium lemon or lime, juiced
  • a pinch cayenne pepper, optional
  • kosher salt, if needed

Grilled Chicken

  • 10 cloves garlic, minced
  • 0.5 teaspoon paprika
  • 0.5 teaspoon allspice
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground green cardamom
  • salt and pepper
  • 5 tablespoon extra virgin olive oil, divided
  • 8 pieces boneless skinless chicken thighs
  • 1 medium red onion, halved and thinly sliced
  • 2 medium lemons, juiced

Instructions
 

Dill Greek Yogurt Sauce Preparation

  • Combine the minced garlic, fresh dill, yogurt, olive oil, lemon juice and cayenne pepper in a food processor. Run until well blended and smooth.
  • Test and add salt if needed. Transfer to a container and refrigerate.

Chicken Preparation

  • In a small bowl, mix together the minced garlic, spices and 3 tablespoon olive oil.
  • Pat the chicken thighs dry and rub each with the garlic-spice mixture.

Marination

  • In a large dish, add onions, lemon juice, and the remaining olive oil. Toss chicken in the marinade.
  • Cover and refrigerate for 2-4 hours.

Grilling

  • Heat a gas grill to medium-high. Place chicken thighs on the grill. Cover for 5 minutes, then turn and grill for another 3 to 5 minutes covered.
  • Rest the grilled chicken for about 5 minutes before serving.

Serving

  • Serve with the dill Greek yogurt dip prepared earlier and enjoy!

Notes

If possible, marinate chicken for best flavor. You can also use boneless skinless chicken breasts instead of thighs.
