Ingredients
  

Vegetables

  • 1 head romaine lettuce or 2 hearts
  • 5 pieces green onions chopped (or scallions)
  • 1 bunch fresh dill chopped

Dairy

  • 4 oz feta cheese crumbled

Condiments

  • cup extra virgin olive oil
  • 1 large lemon juiced (about 3 tbsp)
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon freshly cracked black pepper

Preparation Steps

  • Chop the lettuce - Thinly slice your lettuce and rinse in very cold water. Spin dry in a salad spinner.
  • Make the dressing - In a separate bowl, combine olive oil, lemon juice, salt, and pepper. Whisk or shake until well blended.
  • Assemble the Salad - Add the lettuce, green onion, dill, and feta.
  • Toss - Drizzle the dressing over the salad and use tongs to thoroughly toss to infuse flavor. Garnish with more dill if desired.

Notes

Store the salad and dressing separately in the fridge for up to 4 hours. Re-shake the dressing before serving. Best eaten immediately, but still tasty for 1-2 hours after dressing.
