Ingredients
  

Fresh Ingredients

  • 2 cloves Garlic skin removed
  • 2 pieces Sourdough bread Pane di casa, fresh or day old
  • 1 cup Fresh ripe tomatoes cherry tomatoes can also be used
  • 1 bunch Fresh basil
  • 4 tablespoons Extra virgin olive oil EVOO
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Wash the tomatoes thoroughly and chop them into small pieces in a bowl, catching all the juice.
  • Add extra virgin olive oil, salt, pepper, and one clove of crushed garlic to the tomatoes.
  • Add fresh basil and mix together using hands or a spoon; leave to rest for 10-20 minutes.
  • Slice up to 2 pieces of sourdough bread per person.
  • For Skillet method: Heat skillet and toast bread until golden on both sides.
  • For Toaster method: Toast the bread to desired texture.
  • For Oven method: Place bread on baking paper and heat in the oven until toasted.
  • Rub garlic on the toasted side of bread before adding tomato mixture.
  • Scoop the tomato juice onto each slice before adding tomatoes and basil.
  • If using cherry tomatoes, cut in half and squeeze juice directly onto bread before adding.
  • Serve and enjoy!
