  • 2 large eggs
  • 0.5 cup light brown sugar packed
  • 1 teaspoon baking soda
  • 0.25 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 cup natural creamy peanut butter
  • 1 cup old-fashioned oats
  • 0.5 cup semisweet chocolate chips optional
  • 1 pinch flaky sea salt for topping

Baking Steps

  • Heat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk eggs and brown sugar together until smooth. Sprinkle the baking soda and salt, stir until combined. Add vanilla and peanut butter, then stir. Lastly, add oats and mix well.
  • Use a cookie scoop to place dough on baking sheet and flatten slightly.
  • Bake for 10 minutes, then sprinkle with flaky sea salt and cool for at least 5 minutes.
  • Serve warm and enjoy!
