Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple with juice Use pineapple with juice for maximum moisture and flavor.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • 1 cup chopped pecans Lightly toast for better flavor.
  • 8 oz cream cheese
  • ½ cup butter
  • 2 cups powdered sugar

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Mix flour, sugar, baking soda, and salt in a large bowl.
  • Add eggs, crushed pineapple with juice, vanilla extract, and oil. Mix until combined.
  • Fold in chopped pecans.
  • Pour batter into pan and spread evenly.
  • Bake for 30–35 minutes until a toothpick comes out clean.
  • Cool completely in the pan.
  • Beat cream cheese and butter until smooth, then add powdered sugar.
  • Spread frosting over cooled cake.
  • Slice and serve.
