  • 2 tablespoons olive oil
  • 2 tablespoons ketchup
  • 4 cloves garlic, minced

  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, finely chopped
  • ¼ cup finely chopped onion
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons hot sauce
  • Pinch cayenne pepper

Blue Cheese Butter

  • ½ cup unsalted butter, softened
  • ¼ cup crumbled blue cheese

Flank Steak

  • 2 pounds flank steak

Cooking Instructions

  • Pat the flank steak dry and lightly score both sides.
  • Whisk together marinade ingredients in a bowl.
  • Marinate steak for at least 8 hours or overnight.
  • Preheat grill to medium-high heat.
  • Grill steak 3 to 5 minutes per side.
  • Rest steak for 5 minutes before slicing.
  • Mix butter, hot sauce, cayenne, and blue cheese.
  • Slice steak against the grain.
  • Serve topped with blue cheese butter.

Notes

For best flavor, marinate overnight. Slice thinly against the grain for tenderness. Adjust cayenne for preferred spice level.
