Ingredients
  

Chicken

  • 4 pieces boneless skinless chicken breasts or thighs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt for chicken
  • ¼ teaspoon black pepper for chicken
  • 1 tablespoon olive oil for chicken

Potatoes

  • 1.5 pounds baby Yukon Gold or red potatoes halved
  • 3 tablespoons olive oil for potatoes
  • 4 cloves garlic minced
  • cup grated Parmesan cheese
  • ½ teaspoon salt for potatoes
  • ¼ teaspoon black pepper for potatoes
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

Preparation

  • Preheat oven to 400°F. Line baking sheet with parchment paper.
  • Mix Italian seasoning, paprika, salt, and pepper. Rub chicken with oil and seasonings.
  • Toss halved potatoes with oil, garlic, Parmesan, salt, and pepper.
  • Place chicken on one side of baking sheet, potatoes on other side in single layer.
  • Roast for 25-30 minutes, flipping potatoes halfway. Chicken should reach 165°F.
  • Optional: Add extra Parmesan and broil for golden crust. Garnish with parsley.

Notes

Can use chicken thighs instead of breasts. Ensure potatoes are cut to similar size for even cooking.
