Ingredients
  

Chicken and Potatoes

  • 1 lb chicken breasts cut into cubes
  • 4-5 small/medium russet potatoes
  • olive oil for tossing potatoes
  • salt to taste
  • pepper to taste
  • garlic powder for tossing potatoes
  • paprika for tossing potatoes
  • 2 tablespoon butter
  • ½ teaspoon salt for seasoning chicken
  • ½ teaspoon pepper for seasoning chicken
  • 1 teaspoon paprika for seasoning chicken
  • 1 teaspoon onion powder for seasoning chicken
  • 1 teaspoon Italian seasoning for seasoning chicken
  • 1-2 tablespoon minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce to coat chicken
  • 1 cup shredded mozzarella cheese

Instructions
 

Cooking Steps

  • Wash potatoes, peel them, and cut them up into small cubes.
  • Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika, ensuring they are well coated.
  • Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes, shaking them around a couple of times while they cook.
  • Once the potatoes are half way through cooking, cut the chicken into cubes.
  • Cook the chicken in a skillet on medium-high heat with 2 tablespoon of butter.
  • Season the chicken with ½ teaspoon each of salt and pepper, 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  • Once the chicken is finished cooking, add minced garlic and the Parmesan Garlic sauce, using just enough to coat the chicken.
  • Add the crispy cooked potatoes to the skillet and stir well.
  • Top with shredded mozzarella cheese.
  • Broil in the oven for a few minutes to melt the cheese or cover with a lid on the stove until melted. Top with dried parsley and more Parmesan Garlic sauce if desired.

Notes

If you don't have an air fryer, you can cook the potatoes in the oven at 400 degrees F for about 30 minutes, stirring a few times while they cook.
