Chicken

  • 2 large chicken breasts

Vegetables

  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup corn drained
  • 1 cup black beans drained
  • 1 cup diced tomatoes canned
  • ¼ cup fresh cilantro for garnish

Sauces and Broth

  • 2 cups salsa use high-quality for best flavor
  • ½ cup chicken broth do not add too much

Seasoning

  • 1 packet taco seasoning

Cheese

  • 1 cup shredded cheddar cheese add at the end

Instructions
 

Preparation

  • Gather all ingredients, drain beans and corn, dice the onion, and mince the garlic.
  • Place chicken breasts at the bottom of the crock pot.
  • Add onion and garlic evenly over the chicken.
  • Pour salsa and diced tomatoes on top, ensuring the chicken is fully covered.
  • Add chicken broth to maintain moisture.
  • Sprinkle taco seasoning evenly across the mixture.
  • Add black beans and corn, lightly mixing the top layer.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Remove chicken, shred using two forks, then return to the crock pot.
  • Stir well and let sit on warm for 10–15 minutes.
  • Add shredded cheese on top and let it melt.
  • Garnish with fresh cilantro and serve.

Notes

Use a high-quality salsa for the best flavor outcome. Shred the chicken finely so it absorbs the sauce better.
