Ingredients
  

  • 1 tablespoon oil or butter
  • ½ teaspoon minced garlic
  • ½ jalapeño, finely chopped
  • ¾ cup crushed pineapple
  • ¼ teaspoon salt
  • teaspoon black pepper
  • pinch red pepper flakes, optional
  • 1 tablespoon lemon or lime juice
  • ¾ cup uncooked rice
  • 1 ¼ cups water
  • ¼ cup pineapple juice
  • 2 tablespoons chopped cilantro

Instructions
 

  • Heat the oil or butter in a medium saucepan over medium heat.
  • Add the minced garlic and chopped jalapeño and cook until fragrant.
  • Stir in crushed pineapple, salt, pepper, red pepper flakes, citrus juice, rice, water, and pineapple juice.
  • Stir once, cover, and reduce heat to low.
  • Cook until rice is tender and liquid is absorbed.
  • Let rest covered, then fluff with a fork.
  • Garnish with cilantro and serve.

Notes

Adjust spice level by reducing jalapeño. Use fresh pineapple for brighter flavor. Letting the rice rest improves texture.
