Ingredients
  

Sweet Potatoes

  • 2 medium sweet potatoes

Black Bean Mixture

  • ¾ cup black beans drained and rinsed
  • ½ cup corn
  • 1 green onion chopped

Fresh Salsa

  • 2 small tomatoes diced
  • 2 tablespoons red onion finely chopped
  • 1 to 2 tablespoons cilantro chopped
  • ½ lime juice
  • salt to taste
  • black pepper to taste

Avocado Topping

  • 1 large avocado
  • 2 to 3 tablespoons fresh salsa
  • garlic powder pinch
  • onion powder pinch
  • salt to taste
  • black pepper to taste

Instructions
 

Cooking Instructions

  • Preheat the oven to 425°F.
  • Pierce the sweet potatoes a few times with a fork and place them on a baking sheet. Bake for 40 to 45 minutes, or until tender.
  • Make the salsa by combining tomatoes, red onion, cilantro, lime juice, salt, and pepper.
  • Mash the avocado and mix with salsa, garlic powder, onion powder, salt, and pepper.
  • Warm the corn and combine with black beans and salsa.
  • Slice the baked potatoes and fluff the inside.
  • Fill with the bean mixture and top with salsa and avocado.
  • Garnish with green onion and lime, then serve.

Notes

Keep toppings separate for best texture when storing leftovers. Add extra lime juice before serving for brightness.
