Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups unsalted butter, melted
  • 1 tablespoon granulated sugar

Filling

  • 12 oz cream cheese, softened
  • 0.5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cups heavy whipping cream

  • Easter-themed or pastel sprinkles

Crust Preparation

  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  • Press 1 to 2 tablespoons of the crumb mixture into the bottom of each lined cup in a 12-cup muffin tin.
  • Place the muffin tin in the refrigerator while you prepare the filling.

Filling Preparation

  • In a mixing bowl, beat the softened cream cheese until it is smooth and creamy.
  • Add the powdered sugar and vanilla extract to the cream cheese, mixing until fully combined and smooth.
  • In a separate bowl, whip the heavy cream to stiff peaks.
  • Gently fold the whipped cream into the cream cheese mixture.

Assembly

  • Spoon or pipe the filling evenly over the chilled crusts, smoothing the tops with a spatula.
  • Place the filled muffin tin back in the refrigerator and chill for at least 2 hours or until the filling is firm.

Finishing Touches

  • Melt the pastel-colored candy melts following package instructions.
  • Use a spoon or fork to drizzle the melted candy melts over the top of each cheesecake.
  • Top each cheesecake with mini chocolate eggs, jelly beans, and a sprinkle of festive sprinkles.
