Ingredients
  

Pasta ingredients

  • 150 g pasta of your choice Fresh per person or 100g dried
  • 2 whole heads garlic
  • 2 tablespoon olive oil
  • 30 g butter cubed
  • 0.5 teaspoon pepper
  • 1 cup cream Use heavy if you want
  • 2-3 tablespoon freshly squeezed lemon juice
  • 1 zest lemon
  • 50 g parmesan finely grated
  • Extra zest lemon to serve
  • dried paprika flakes optional to serve

Instructions
 

Cooking Instructions

  • Preheat your oven to 200°C (400°F)
  • Prepare your garlic bulbs. Take off the outer papery layers and cut the top off horizontally.
  • Drizzle the top with olive oil then wrap in foil and roast for about 45 mins.
  • Let roasted garlic cool and squeeze out the garlic into a smooth paste.
  • Cook your pasta in a pot of salted boiling water.
  • Melt the butter in a frying pan over medium heat.
  • Let butter foam up then add the pepper and stir.
  • Add the garlic paste and whisk, adding to taste.
  • Add the cream and whisk while maintaining a gentle simmer.
  • Add the lemon juice and zest and whisk again.
  • Stir in the parmesan in batches, letting it melt.
  • Simmer for a couple of minutes until thickened.
  • Combine cooked pasta with the sauce and a ¼ cup of pasta water, allow to bubble.
  • Adjust sauce consistency with more pasta water if needed.
  • Top with extra lemon zest and paprika flakes before serving.

Notes

The amount of lemon and garlic can be adjusted to personal preference. If dried paprika flakes are unavailable, substitutes include chili flakes or smoked paprika powder.
