Ingredients
  

  • 2 pounds fresh whole snapper scaled, gutted, cleaned
  • 2 large cloves garlic minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup fresh lime juice
  • 2 tablespoons olive oil
  • 6 sprigs fresh thyme
  • fresh lime for serving
  • 1 large egg yolk for aioli
  • 2 cloves garlic finely minced for aioli
  • 1 teaspoon dijon mustard for aioli
  • ½ teaspoon kosher salt for aioli
  • 2 tablespoons lime juice for aioli
  • 1 cup vegetable oil or other neutral tasting oil (do not use olive oil)
  • sprigs fresh parsley for garnish

Instructions
 

Prepare the Snapper

  • Ensure the fish is cleaned by your fish monger or clean it yourself.
  • Mound minced garlic, scotch bonnet pepper and kosher salt together; grind into a paste.
  • Mix in black pepper, scallions, shallots, lime juice, and olive oil.
  • Fill the fish cavity with thyme, sliced onions, and lime wedges.
  • Pour marinade into the fish; cover with plastic wrap and refrigerate for 1 hour.

Make the Garlic Aioli

  • Whisk together egg yolk, dijon mustard, and garlic in a small bowl.
  • Slowly drizzle in vegetable oil while whisking until emulsified.
  • Add lime juice and adjust seasonings as needed; refrigerate.

Grill the Snapper

  • Preheat grill to 450°F for direct heat grilling.
  • Spray fish basket and place fish inside (no need to remove marinade).
  • Grill fish for 10-12 minutes on each side until cooked through.
  • Transfer fish to platter, sprinkle with scallions, parsley, and lime wedges; serve with garlic aioli.

Notes

For optimal flavor, allow the fish to marinate for the full hour.
