  • 2 large Ripe bananas
  • cup creamy peanut butter crunchy works, or almond butter
  • 2 tablespoons coconut oil or avocado oil
  • cup honey or maple syrup
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup whole wheat flour or all-purpose
  • 1 ¼ cup quick oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup chopped pecans or walnuts

Preparation Steps

  • Preheat the oven to 350 F and line a large sheet pan with parchment paper.
  • In a mixing bowl mash the ripe bananas.
  • Add peanut butter, honey, coconut oil, egg, and vanilla extract; Whisk to combine.
  • Add whole wheat flour, quick oats, baking powder, baking soda, ground cinnamon, and chopped pecans. Stir until incorporated.
  • Divide the mixture into about 16 balls, shape them into cookies, and place them on the prepared sheet pan.
  • Bake for 10-12 minutes until golden on the sides. Allow to cool for 5 minutes before serving.

Notes

Ensure the bananas are ripe. You may use any flour of your choice, and nuts can be swapped with chocolate chips if desired. Store cookies in the fridge for up to 7 days.
