Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley (optional)

  • In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, onion powder, oregano, paprika, salt, and pepper until well combined.
  • Pat chicken breasts dry and add them to the marinade. Toss to coat evenly. Cover and refrigerate for 30 minutes to 4 hours.
  • Preheat oven to 400°F (200°C) and grease a baking dish or sheet pan.
  • Arrange chicken in a single layer, leaving space between each piece.
  • Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  • For a golden top, broil for the last 2–3 minutes (optional). Watch closely.
  • Let rest 5 minutes before serving. Garnish with parsley if desired.

Notes

For best flavor, marinate chicken for a longer duration. Adjust spices according to your taste preference. This dish pairs well with various sides like rice or vegetables.
