Ingredients
  

  • 3 cups vegetable broth
  • 2 tablespoons miso paste
  • 4 ounces soft tofu, cut into small cubes
  • 1 green onion, thinly sliced
  • 1 tablespoon dried seaweed

Instructions
 

  • Pour the broth into a small pot and warm it over medium heat. Keep it hot, but do not let it boil.
  • Place the miso paste in a small bowl. Add a few spoonfuls of the hot broth and stir until the mixture is smooth.
  • Reduce the heat to low and stir the miso mixture back into the pot.
  • Add the tofu and dried seaweed. Let the soup sit on low heat for 1 to 2 minutes, just until the tofu is warmed through and the seaweed softens.
  • Turn off the heat, sprinkle in the sliced green onion, and serve right away.

Notes

Do not boil the soup after adding miso to preserve its flavor. You can substitute vegetable broth for traditional dashi. Serve immediately for best taste.
